Egg Curry - A savoury preparation of hard boiled eggs
Ingredients 4 Eggs 1 inch piece Ginger 4 Garlic Clove 2 medium onions 2 medium tomatoes 5 cloves (if available) 8 peppercorn 2 tbsp. Oil 1 tsp. chili powder Salt to taste 2 tbsp. Lemon Juice Handful of Parsley leaves
Method Place eggs in two cups of boiling water. Continue to boil for ten minutes. Drain, cool, shell and chop the eggs into 4 halves.
Peel and chop ginger and garlic. Slice onions. Chop one tomato and slice the other. Chop coriander leaves.
Grind garlic and ginger with cloves and peppercorns to a fine paste, also known as masala.
Heat oil, add the onion slices and sauté till brown. Add chopped tomatoes, ground masala, red chilli powder and salt. Stir and add the chopped eggs.
After five minutes, stir lightly. Serve hot garnished with tomato slices, lemon juice and chopped coriander leaves.
